Beef Chuck Roast

I am convinced that a Crock Pot is a busy wife & mother's best friend! Here's what's for dinner tonight & it can be for you too! Easy as 1, 2, 3 and a great way to avoid heating up the kitchen w/your stove or oven on a hot summer day! 

What you need:

Beef Chuck Roast
1/2 - 1 Onion
2 Cloves Garlic
1 Cup Beef Stock or Broth (Or can use water)
1/4 Cup Wine (Whatever you have on hand or Cooking Sherry; can be omitted altogether if desired) 
Salt & Pepper

What you do:

Tenderize beef by "stabbing" with a fork all around. Salt & pepper both sides. Place the beef in crock pot. Add beef stock, broth, wine, water (whatever you have chosen to use). Rough chop onion & place on top of beef. I use a grater & grate the cloves of garlic on top of beef. Place top on & cook on high all day (4-6 hours or so depending on size of beef). Or cook on low if cooking 6+ hours. 

That's it! Walk away & enjoy the summer day with your kids & your husband will never know you didn't slave over a hot oven all day! Pair w/Mashed Potatoes & Veggie of choice & Dinner Roll & wa la - you're "Walking In Victory!"
